Today I decided to make unusual pancakes that I've heard about a lot - sweet potato pancakes! Honestly saying, there are no much difference between this one and the pumpkin one.
Thanks to the sweetness of potato, you don't have to add any sugar or other sweeteners, what is really awesome, just like with the banana.
For 2 servings
- 1/2 cup baked sweet potato
- 1 cup oat flour
- 1/2 cup almond milk
- 1 egg / flax seed (for vegan)
- 1 tsp cinnamon
- 1/2 tsp baking powder
- 1 tbsp coconut oil (melted) + for frying
For toppings :
melted peanut butter / nuts / maple syrup
Mix all the ingredients in the large bowl. Heat the pan with some coconut oil and pour the small amount of batter with a diameter of 6 cm. Fry until golden brown. Top with anything you want and enjoy!
