I don't know how about you guys, but I think chickpeas are just made for veggie people.They are super easy to prepare and can be used in lots of types of dishes, also desserts! Today I'm showing you the other modification with chickpea which is by adding peanut butter. Crazy, right?!
Also you don't need that much ingredients so it's super easy and quick to made ( because time is running so fast..). You can serve it with grains of choice or simply with rice. Bet you gonna love it!
1 400g can chickpeas drained and washed or about 1 and half cups cooked
2 small, sliced carrots
1/2 sliced yellow onion
3 tbps peanut butter
1/2 tsp oil
1/2 tsp grounded ginger
1/2 tsp ground cumin
1/2 tsp cinnamon
2 cloves of garlic
salt and pepper to taste
1/3 cup chopped cilantro or parsley
3/4 water or broth
1/4 cup soy milk or other plant milk or 1/3 coconut milk (canned)
Heat the oil over large skillet over medium heat. Add onion and cook until slightly brown, stirring from time to time. Then, add in all the condiments and squeezed garlic, cook for about 2 minutes. Add peanut butter and non-dairy milk. Once mixed, add water and mix it well. Add the veggies, cover and bring to a boil for 5 mins. Reduce the heat and cook for another 5 mins, now it is time that you can add some salt or pepper as you like it. Add the greens of choice and simmer for a while.
